I’ve made this a few times now. I was trying to figure out the perfect blend. Not blend of seasonings and ingredients as you might imagine. But literally, the perfect blend. It’s a good thing I learned the Goldilocks story as a child because I needed the lesson contained within it to perfect this soup. The first time I made it: I used the new immersion blender I just got for Christmas. I was a little disappointed with the texture. It didn’t get absolutely smooth! I was surprised because I only have good memories of using my old immersion blender … Read More
The holidays are officially over in the Penner household. We went to Christmas gathering 7/7 today. It’s been a busy couple of weeks. A good kind of busy. My heart has been filled with good memories and my stomach has been filled with delicious decadent food. But as much as I look forward to Christmas and feel sad when it’s over, I’m also happy to get back into the routine of everyday life. I think it’s a sign that you’ve chosen a good career path when you’re happy to get back to work 🙂 And I’m so excited to see what 2016 … Read More

Save money and eat healthier by making a copycat version of the Olive Garden creamy chicken gnocchi soup! Over the past month our family has taken a couple mini-vacays that have involved sleeping at hotels. I signed up to Pinch of Yum‘s food photography workshop in Minneapolis, MN. As a side note, I highly recommend Pinch of Yum’s photography and blogging resources! On our last night there, our toddler slept … Read More
Bacon is kind of the rage these days, but I guess I’m a bacon hipster, I loved it before it was cool. As a child I was the pickiest of picky eaters, and wouldn’t eat any meat, except bacon. My parents tried the “trickery method” to get me to eat other meat too… they would give me chicken and tell me that it was bacon. My sense of taste, however, was stronger than they realized and I saw right through the lies! As a side note, don’t try to trick your children into eating foods they haven’t yet learned to like. Once the … Read More
This African Peanut Soup is a super simple vegan soup to make bursting with sweet ‘n spicy flavours! Instant Pot or Stove top directions. We don’t eat out at restaurants very often, but when we do, I like to order something unique. I love adding new and interesting foods to my palate. If I end up loving it, I take mental notes to replicate it when I get home. My husband usually ends up telling me that my version is tastier, which further motivates me to experiment in the kitchen. We make a good team, my husband and I. I love to … Read More
Sometimes you don’t have much to say but you just want to post a recipe. I don’t know about you, but I usually just scroll down to the recipe anyway. So, I’ll save you some scrolling and just tell you…. Why It’s A Smart Choice This soup is full of healthy fats. The coconut flakes and milk have medium chain fats that are preferentially used by the body for energy instead of storage, and may cause a slight, temporary increase in metabolism after consumption. The hemp hearts contain omega 3 fatty acids, which are great for the immune system, skin, hair, … Read More
