Sacrilege! Peeled potatoes drive me crazy, because the skins have considerably more fibre than the flesh! Don’t throw out the good stuff!

Fibre is a key nutrient for keeping both our guts and our hearts healthy. We need fibre, not only to keep things moving in the gut, but also to promote the growth of healthy gut bacteria. Essentially fibre is the food that the good bacteria live off of!

  • Cook Time: 20 minutes
  • Total Time: 30 minutes
  • Yield: 6 servings


  • 2.5 lbs potatoes (about 10 small)
  • 2 tbsp olive oil
  • ¬ľ cup lemon juice (juice from 2 small lemons)
  • 1 tsp oregano
  • 3/4 tsp salt
  • freshly ground pepper
  • 2 tsp chicken or vegetable bouillon *see note


  1. Scrub the potatoes.
  2. Cut into bite-sized chunks and place in Instantpot.
  3. Whisk together the olive oil, lemon juice, oregano, salt, and bouillon.
  4. Pour over the potatoes.
  5. Stir to combine slightly.
  6. Crack some freshly ground pepper over top.
  7. Put the lid on tightly and make sure vent is on ‚Äúsealing.‚ÄĚ
  8. Press manual and choose 7 minutes.
  9. Use release method of your choice.


*I like to use the Better Than Bouillon paste. It has a delicious authentic chicken broth flavour!

  1. I made these potatoes to serve alongside another Greek dish (mostly shrimp). I gave my son a very small serving of potatoes since he has not been a potato fan (since he was in my belly and had me craving potatoes). However, my son took a bite, as he is required to do, then proceeded to eat all the potatoes before even trying the shrimp (a longtime favourite). He asked for a second serving of the potatoes, which has never happened before (he has even asked if he can sub broccoli for fries, he is usually that averse to potatoes. These are so super yummy. Thanks for this recipe. The child asked me to bookmark this recipe so I can make it again.

    Oh, my IP is prone to burning, so after seeing some other commenters saying that got a burn notice, I followed the recipe with the PIP method, which worked well. I just needed to cook them a little longer, like 10 minutes, instead of 7, with a 10 minute NPR.
