mason jar salad

Aaaaah, January. The time of year when you vow to stick to a budget, exercise everyday, quit drinking wine, stop eating fast food for lunch, and finally become a superhuman!  While your intentions are admirable and undoubtedly genuine, they’re unlikely to produce lasting results.  Sorry to burst your bubble by being a Realistic Rhonda over here. But you already knew it deep down, didn’t you? My friend, colleague, and newest Dietitian Blogger on the block; Kristy, had this to say on Instagram at this optimistic time of year:  ” It’s tempting to think “Oh gosh, my eating is terrible, I need to overhaul EVERYTHING!” … Read More

Feta Beet Salad

Feta beet salad – a filling, earthy, salad with a sweet side: Candied nuts, salty feta, roasted beets, quinoa, and salad greens all get drizzled with the most scrumptious sweet balsamic dressing! I’m pretty excited to share with you my latest favourite thing ever: sweet balsamic vinaigrette. This is a pretty big statement coming from someone who previously despised anything and everything balsamic. Let’s just say miracles happen. Or rather, I smartened up and realized that I could overcome my fear of certain foods. Since I started to do that, life has gotten infinitely more delicious. This balsamic dressing goes with … Read More

Greek Chicken Quinoa Salad

Why choose this Greek Chicken Quinoa salad? I know there are a lot of recipes for Greek salads out there…¬†because I’ve made a lot of them. I’ve also tinkered with the basic ingredients a LOT. We like Greek in this house, and I can tell you that this is the best Greek salad and dressing I’ve ever tasted. It’s the best Greek salad dressing my husband has ever tasted. Since I generally make really good food and I’m quite alright with patting myself on the back about it, my husband is¬†quite alright with telling me when something isn’t up to … Read More

Orange Sesame Salad with Chicken and Quinoa

If you have an eye for detail you’ll notice a little discrepancy. The recipe calls for almonds but you won’t find them in any of the photos! When I photographed this recipe, I completely forgot to sprinkle with almonds! After I had noticed my mistake I thought about changing the recipes by omitting the almonds. But I couldn’t. The almonds are KEY! They add a surprising and welcome crunch to this salad. While the almonds are key, the vegetables are fairly interchangeable. While my favourites with this dressing are the broccoli and snap peas listed, I’ve also added cucumbers and … Read More

Sundried Tomato and Feta Salad with Chicken

Photography fails galore with this post.  Jeremy was home during the day so I tried to get a couple of shots I can’t normally do on my own.  The pour shot. When attempting the pour shot, use a salad dressing that actually pours. This dressing is thick, like a good Caesar. It just fell onto the salad in globs and did not bode well with the camera. Seriously… what was I thinking? The hold shot. When attempting the hold shot you should a) wear something cute, b) find a nice background and c) figure out the right camera angle. I failed on … Read More

Mango Quinoa Nourish Bowl

Nourish bowl. Macro bowl. Buddha bowl. Glory bowl. Lunch bowl. Power bowl. And my husband’s personal favourite: the Glow bowl (takes him on a trip down memory lane to the glow bowling days of the 90s).  Whatever you want to call these things, they are delicious and nutritious! (#nutritiousisdelicious) Think of it as an amped up, balanced meal, kind of salad.  Mckee Hill, Registered Dietitian and blogger over at Nutrition Stripped breaks down the anatomy of a nourish bowl like this: greens, protein, healthy fats, veggies, carbs (including fruits), add-ons, and dressings.  The best thing about these bowls is their flexibility. It’s the thing to … Read More

citrus crunch salad

citrus crunch salad

This is a salad with a dissected dressing. Usually a dressing contains: something sweet something salty something sour something fatty Instead of keeping all those elements in the dressing, I split them up!  the seeds are sweet  the cheese is salty the dressing is sour and fatty Did you cringe when you read the word ‘fatty’? The word has negative connotations because of our prior misconceptions about fat, and it’s high time we change that. Our bodies need to eat fat! We need fat for: our brains to function properly our nerves to conduct messages building cell walls preserving body heat … Read More
