Double Chocolate Zucchini Oats

A delicious way to add veggies to your breakfast routine!

Ingredients

cups
oats

cups
milk
2
cups
water
2
cups
shredded zucchini
2
eggs
2
bananas
mashed
⅓
cup
unsweetened cocoa
2
tbsp
chia seeds
½
tsp
vanilla
or ¼ tsp vanilla powder
Chocolate chips
for topping (optional)
Instructions
In a medium large pot, place the oats, milk, water, and zucchini. Cook on medium high until oats have absorbed most of the liquid.
Crack the eggs into the pot and stir, stir, stir until the egg are fully incorporated. Cook a further 2 minutes, stirring constantly.
Turn off the heat and add in the bananas, cocoa, chia, and vanilla.
Serve into bowls and top with chocolate chips.
